Katoffelpuffer are internationally famous German creations made in several versions. They are often served with apple sauce and as accompaniments to such meats as roast pork or sausages.
4 medium (about 1 and a third pounds) potatoes.
1 small onion.
1 large egg.
2 tablespoons flour.
Salt, and pepper to taste.
Shortening for frying.
Peel the potatoes and onion and grate into a large bowl. Drain off any liquid, pressing with a spoon to release all of it. Add the egg, flour, salt, pepper, and mix well. Heat enough shortening in a frying pan to grease the surface.
Drop spoonfuls of the potato mixture into the fat and fry for a few minutes to brown. Turn over with a spatula and brown on the other side, adding more shortening if needed. Serves 4.
